Food And Dining at Hacienda Gauchipelin
We chose a breakfast included stay at Hacienda Gauchipelin and the full service buffet included an omelette station, locally inspired dishes as well as pastries and continental styled options. We also chose to dine at La Hacienda Restaurant for dinner and the wide variety of options was truly impressive. See some of their Farm-to-Table highlights:

Farm-to-Table Freshly-Made Meals
- We grow most of our fruits and vegetables in our hydroponic greenhouse and gardens by the restaurant, and in outlying fields
- We use only fresh herbs and spices from our garden
- No MSG, canned or jarred sauces, or boxed juices are used. We make all sauces and fruit juices fresh. We make our own jams from fresh fruit with no preservatives
- Gluten-free, non-dairy, vegetarian and vegan menu options are available
- Eggs come from our more than 350 free-range chickens
- Milk fresh from our cows is brought to our restaurant kitchen every morning to be processed. You will enjoy it in your breakfast cereal, coffee and tea, and also in our homemade farmer’s cheese and desserts. Help our ranch hands with the morning milking on our Ranch Life Tour or our Cowboy for a Day Tour
- We raise cattle, pigs and turkeys for meat; and bees for honey
- Only sustainable farm-raised tilapia and shrimp are served in our restaurant
- We serve coffee grown on a small family farm in Naranjo, Costa Rica
Waterfalls of Hacienda Gauchipelin
Hacienda Gauchipelin boasts access to 5 different waterfall combinations across the property. “Catarata” in Spanish translates to Waterfall and Hacienda Gauchipelin houses some of the area’s most beautiful.
As long as I live, I’ll hear waterfalls and birds and winds sing. I’ll interpret the rocks, learn the language of flood, storm, and the avalanche. I’ll acquaint myself with the glaciers and wild gardens, and get as near the heart of the world as I can.”
John Muir
*** A Quick note: We strive to offer a transparent account of our travel adventures and must caution against swimming in natural waterfall pools. Submerging your head and jumping into natural pools can place you at risk for a variety of bacterial infections. We did encounter this and unfortunately lost a full day due to a severe GI illness. Although we will always enjoy the thrill of swimming in natural waterfall pools, we will be more cautious in the future!
Unfortunately there is not an easy remedy once the bacteria has entered your system. As we learned the hard way, medicine like peptobismol actually prolongs this process and may make it worse over time. We are NOT medical professionals -Hacienda Pinilla does have a doctor on-site, consult the front desk if you require additional medical assistance while on the property. Thankfully we did not need to seek emergency treatment but this is one reason we always recommend travel insurance in the event your adventures present a health threat.
1. Catarata Oropendola

Located adjacent to the entrance of Rincon de la Vieja National Park, this waterfall packs a big punch. Just a 10-15 walk from the parking lot, you will cross down some steep stairs and over some hanging bridges to the viewing platform. From there you can swim in the pools or simply view the fall from a variety of vantage points. There is a good deal of shade here and this is a great way to cool off after a hike in Rincon De La Vieja.
2. Catarata Las Chorreras and Blue River Ponds

These falls are located within an half hour walk from the Adventure Center and Dining options. You’ll cross through the farm and pastures before entering the forest and approaching the falls. This is a smaller waterfall but the color is a bright turquoise blue which enhances the beauty of this smaller waterfall. We continued our morning walk from Las Chorreras to the Blue River Ponds, which although less dramatic made for a peaceful and relaxing morning stroll.
3. Rio Negro Waterfalls

A series of three waterfalls within close walking proximity to the Rio Negro Hot Springs entrance (across the street) – this is an easy walk and offers some beautiful falls. The water here is not as turquoise blue and we do believe these pools were the culprit in contracting a Bacterial infection- please proceed with caution.
4. La Victoria Waterfall
Located near the tubing excursions, this waterfall also provides incredible canyoning opportunities with its 115 ft. drop. Located approximately 5K from the main hotel, you can access this portion of the property via their shuttle system.
5. The waterfalls of Rincon de la Vieja National Park
There are three additional waterfalls within Rincon de la Vieja National Park: La Cangreja Waterfall, Escondida Waterfall and the Seasonal or Unnamed waterfall. A day hiking in Rincon de la Vieja is definitely worth exploring! See our full guide to hiking in Rincon de la Vieja National Park Here: “Rincon De La Vieja: Costa Rica’s Most Under-Rated National Park”

Bonus Waterfall: La Leona
We highly recommend adding a tour of La Leona to your Rincon de la Vieja itinerary. This extraordinary waterfall offers turquoise blue water and towering canyons and is an adventure all its own just to get there. This waterfall does require a tour guide but there are plenty of options and the cost is reasonable. If you are traveling from the Pacific coast, this is a great stopover before check-in at Hacienda Gauchipelin.
La Leona Waterfall Tour
Wildlife, Flora and Fauna of Rincon de la Vieja
Although this region of Costa Rica may not offer the dramatic jungle vibes that parks like La Fortuna, Monteverde and Manual Antonio offer, this area of Costa Rica is significantly less crowded and still offers an incredible variety of beautiful flowers, plants and wildlife. While offering more sunshine and less crowds, we would argue that the overall experience in Rincon de la Vieja rivals some of the more popular National Parks in Costa Rica. The grounds of Hacienda Gauchipelin offer some incredible birding and a wide array of plant life. Take some time to explore the property- we saw everything from humming birds to brightly colored parakeets to owls and iguanas on the property. The fun festive decor caters to families with children and we found the property to have Costa Rican Disneyworld vibe at times with lots of opportunities for educating young children.

Staying at Hacienda Guachipelin: Is It Worth It?
Rooms at Hacienda Guachipelin are comfortable, clean, and designed to fit the natural surroundings — think rustic eco-lodge, not luxury resort. The variety of amenities at Hacienda Gauchipelin offer incredible value and the ability to visit here without a rental car add additional economical value to staying at Hacienda Gauchipelin. The staff at Hacienda Gauchipelin are incredibly helpful, you’ll receive a welcome cocktail at Check-in and they will review all the logistics to planning your stay- including the times for shuttle service. The pool area is stunning with views overlooking the volcano and having food and cocktails delivered to your chair is a great way to wind down the day!

Staying overnight is worth it if:
- You want early access to tours
- You plan to do multiple activities
- You want hot springs without rushing- we recommend visiting after the tours leave for the best experience
- You want to access the variety of amenities and don’t want a rental car
Compared to booking tours separately from elsewhere in Guanacaste, staying on property often ends up being a better value. A day trip/pass alone will cost $145 per person which easily justifies a few nights stay at this family-run, eco-friendly resort!
